vegan banana cashew yogurt


This "yogurt" of some sorts is not something that is trying to hard in order to be vegan. Yes, it doesn't happen to contain milk or eggs, but instead, it utilizes the creamy texture of the bananas and the wholesome substance of the cashews. I like this recipe because its painfully simple and doesn't require any added sweetening. Although I bake an incredible amount, recipes that require cups and cups of sugar make my teeth hurt. With this one, however, all the sweetness comes from the bananas.
I've always been a plain yogurt kind of gal. I like my yogurt tangy and rich. I'm definitely not a low-fat kinda girl either, which explains why I never try those flavored yogurts. I've found an exception. This yogurt is kind of banana flavored, but its a natural banana flavor. It doesn't hit you over the head with itself. 

*That being said, I did have to modify the original recipe because the yogurt was too sweet for me. I added a bit more of the lime/lemon juice. If you prefer the original, only add a tablespoon of lime juice. 

Vegan banana cashew yogurt
Although the cashews need soaking, its so easy to just throw them in a bowl with some water right before bed and wake up to the prospect of this healthy and delicious breakfast! 

1/2 raw cashews soaked overnight then drained. 
2 ripe bananas
1 Tablespoon + 1 teaspoon lime juice*
2/3 cup coconut water
1/8 teaspoon sea salt

Blend all ingredients in a food processor or blender until thick and smooth. Enjoy with homemade museli or granola or fruit.

  3. I don't see why not. Just make sure that you soak them overnight. I tried a shorter soaking time, but the yogurt wasn't as smooth. It might have a really good toasty flavor.
