Thick and Creamy Cardamom Lassi





After I had a cookie, I just wanted a lassi. What is a lassi you may ask? A lassi is a cool, refreshing, thick yogurt drink that can come sweet or salty.  Also, you can drink a lassi on the floor in really cool orange pants. 



When I think of a lassi, I imagine playing piano. When I lived in LA, I took piano from a lovely lady who lived in Culver City. Culver City was lovely, she was lovely, but my lesson was at six. Not. Lovely. For those of you who reside in the LA area, you know that getting from the valley to the Culver City area at for six o'clock is not a pretty site. It could take an hour,  it could take two, you never knew. But, there was light in the dark. A small vegetarian Indian restaurant called "samosa house" (I think), opened up right on our route. I remember a savory jackfruit curry and the smells of opening a package of garlic naan sitting in the backseat. But what I remember most, was the inauspicious paper cups filled with creamy lassi as I dreaded telling my teacher i really hadn't had time to practice. 


I grind my cardamom using an ancient spice grinder we inherited from my mom's predecessor. I'm blesses with an immersion blender which we got from the same lady. I use it in place of a food processor, a blender, and a standing mixer. 



Sweet Cardamom Lassi

Ingredients 
2 cups good cold yogurt
2-3 Tablespoons sugar (2 if you like it less sweet and 3 if you like it more sweet)
1 teaspoon freshly ground cardamom (you can also use store-ground but it won't be the same)
1/4 cup milk (or less depending on how thick you like it)

Using an immersion blender in a tall immersion-blender proof bowl or pitcher, blend yogurt, sugar, and cardamom together for 1 minute. Slowly add in milk while blending until it reaches the thickness you would like. Chill for 20 minutes or serve immediately if you don't mind it not being very cold.
