our favorite kale salad



This is the kale salad my mom makes. Its slightly salty and lemony, but super easy. Its not ingredient heavy, so you can make it at a moments notice. It good by itself for lunch, but also is great paired with pasta or meat. Try to find the best tuna you can.

makes enough for 4 

*drain can of tuna in water. Fill the can 2/3 of the way with olive oil and mix into the tuna.

1 big head frilly kale 
1/2 medium sized lemon seeds removed
1 can tuna in oil or make your own from tuna in water*
1/2 cup toasted sunflower seeds or toasted almond slices 
lots of course salt, if available
freshly ground black pepper 

Wash kale and remove any thick or woody parts. Depending on the kale, sometimes you need to remove all the stem, sometimes only the bottom parts. 

Chop kale coarsely and salt generously. Massage the kale, squeezing it to soften and fibers. For an even softer kale: let sit 5 minutes then massage again. 

Rinse a couple of times until most of the salt is gone and the flavor isn't too salty. Drain well and either use immediately for salad, or store for up to 3 days, covered,  in the fridge. 

Toss kale with tuna and oil, sunflower seeds, and squeeze lemon over salad carefully to taste (don't add to much lemon). Add pepper and toss.
